How the Lost Cajun came to Keller: Jay was visiting his sister-in-law in Midland Texas and stumbled on to The Lost Cajun. Anyone who knows Janice, Jay's wife, knows she loves food, especially Cajun food, so when Jay told her that he had eaten at an AMAZING Cajun restaurant in Midland, Texas, she was all ears! He told her that “one bite of the gumbo took me back to my childhood in my uncle’s kitchen in Houma, LA.“. So, naturally, when he said that he wanted to buy a franchise, it was a no brainer. ''Let’s do it,'' was her response! Jason “Jay” (born & raised in the New Orleans area) and Janice Smith (a Texas native, raised just outside of New Orleans) met in high school. They were married in Metairie, LA, and lived in south Louisiana until Hurricane Katrina in 2005. They evacuated to Texas and ended up planting new roots in the Dallas/Fort Worth area. Jay and Janice have been blessed with four children, Jason, Jenny, Julie, and Jonathan. The blessings keep coming with six grandchildren and another arriving in June 2018. The Smiths prioritize four things above all else: faith, family, friends, and, of course, FOOD. They believe food makes everything better. When Jay and I first spoke, he said he felt an immediate connection with our culture of courtesy and respect. We talked for over 45 minutes, then Jay called Janice. She had not heard that kind of excitement in Jay’s voice in years. He could not believe how authentic the food, the environment, and even the music playing in the restaurant were... and he wanted to be a part of it all. We have all taken trash out to the curb, but where does that trash go!? Community Waste Disposal has been serving Keller for many years! CWD picks up, processes, and properly disposes the trash in Keller. We are offering the community an opportunity to get a behind the scenes look at what CWD does. Friday, September 27th at 10:30am we will meet at the Keller Chamber office and leave for CWD Headquarters. There we will take a tour of the facility and meet the people that run CWD.
